Flavonoids present in tea with epicatechin (ECG, EGCG) and catechin configurations (CG). Catechins are major components of tea. Catechins contain a benzopyran skeleton with a phenyl group substituted at the 2-position and a hydroxyl (or ester) function at the 3-position. Variations in the catechin structure include variations in the stereochemistry of the 2,3-substituents and the number of hydroxyl groups in the B-ring and D-ring. Belonging to the flavanol class of flavonoids, the most abundant catechins found in tea leaves include catechin-3-gallate (CG), epicatechin-3-gallate (ECG), epigallocatechin-3-gallate (EGCG).
